What makes a dutch oven good for bread

Two things: a shallow, open base you can load easily, and a lid tall enough to clear a full oven-spring. A combo cooker nails the first — you place the loaf on the flat skillet and cap it with the deep pot, no lowering into a hot well. A dedicated bread pan like the Challenger nails both, with a wide base and a tall domed lid, which is why serious bakers rate it (and why it costs what it does).

Round or oval? What size?

A round pot suits the classic round boule; an oval suits a batard (long) loaf. For size, a 5 to 6-quartpot fits a standard 800–1000g loaf with room for spring — the combo cooker’s 10.25-inch base is ideal for a single boule. Enameled or bare for bread?

Both work. Bare cast iron(the combo cookers) is cheaper, handles the dry 450–500°F bake happily, and is the baker’s traditional choice. Enameledis easier to keep clean and you never worry about seasoning. Bread isn’t acidic and the bake is short, so neither has a real edge on the crust — pick on price and loading ease.
