Bare cast iron dutch ovens are the cheaper, tougher cousins of the enameled pots. There’s no enamel to chip, so they’re nearly indestructible, and they’re the choice of most bread bakers — the combo cookers in particular make loading and scoring a loaf far easier than a tall enameled pot. The trade-off is that a bare pot needs the same seasoning care as a skillet, and long acidic braises can dull the seasoning until it’s well established.

How to choose a bare cast iron dutch oven

Ask what you’ll cook. For bread and versatility, a combo cooker or double dutch oven wins — the shallow skillet base makes loading a loaf easy, and you get a second pan for free. For big-batch stews and chili, a 7-quart loop-handle pot. For a whole chicken or a long roast, an oval roaster fits the shape better than a round pot. For cooking over a fire, a legged camp oven with a flanged lid that holds coals on top.

The seasoning trade-off

A bare pot is cheaper and tougher, but you maintain it like a skillet: dry it fully after washing and wipe on a thin film of oil. Until the seasoning is well built, go easy on long tomato- or wine-based braises, which can lift a young seasoning.
